Planting Density: 4500 vines per ha

Production Area: San Marzano, in the norther part of Salento near the Jonico’s arch. The soft soil layer is clayey and quite thin, with a good presence of rocks. We are in heart of a territory called “red soil”. The climate is characterized by high temperatures and low rainfall.

Harvest Period: Second and Third week of September

Vinification: Thermo-controlled maceration, followed by soft pressing at the end of the fermentation.

Ageing: French oak barriques for 4 months

Tasting notes: Deep ruby red with violet reflections; intense and wide on the nose, with notes of cherry and plum, and spicy with black pepper and cacao scent. A full-bodied wine, soft and well-balanced

Menu Suggestions Excellent with red meat, roast with elaborated sauces, cheese mildly seasoned.
